Sour roasted horse, leek, parsnip, thyme

This is the most elegant of our horsey sports line!  We use tenderized pony flank pounded thin and roll it up with a mire poix of leek, parsnip and thyme for a drink that it as beautiful and sophisticated as the animal from whence it came!  Sip this INSTEAD of a fine Pouilly Fuisse!
